Hygroscopic Coatings Control Surface White Discoloration of Peeled (Minimally Processed) Carrots During Storage
نویسندگان
چکیده
White discoloration on peeled carrots is partially due to surface dehydration which can be controlled with hygroscopic coatings: e.g., polyhydric alcohols and salt solutions. This study was performed at 2.5, 7.5, 10, and 157C, using a model system controlling relative humidity at 33, 75 or 98% or a commercial system with low-density polyethylene (LDPE) plastic film bags. The moisture sorption properties of propylene glycol, sorbitol, glycerol and calcium chloride enabled them to keep the carrot surface moist and maintain a transparent surface layer through which the underlying orange color was visible. This effect was only observed at high relative humidities (e.g., 98% RH). Similar effects were observed on treated peeled carrots stored in LDPE bags. The moisturized appearance provided by the hygroscopic coatings during storage was effective at several different temperatures.

Mechanism of Surface White Discoloration of Peeled (Minimally Processed) Carrots During Storage
A proposed mechanism of white discoloration development on peeled carrots included both physical and physiological responses to wounding. The physical response is a color change due to reversible surface dehydration. This study was performed at 2.5 and 10°C using a mode1 system controlling relative humidity, at 33, 75 or 98%, and a commercial system with low-density polyethylene (LDPE) plastic ...
متن کاملThe effect of preliminary processing and different methods of cooking on the iodine content and selected antioxidative properties of carrot (Daucus carota L.) biofortified with (potassium) iodine
Carrot is a vegetable that contains many nutrients and has strong antioxidant activity as well as pro-health potential. The level of bioactive compounds is strongly connected with the production chain. The thermal treatment of food products induces several biological, physical and chemical changes. In this study, changes in the levels of iodine, total carotenoids, total polyphenols as well as t...
متن کاملNano-ZnO/carboxymethyl cellulose-based active coating impact on ready-to-use pomegranate during cold storage.
Minimally processed pomegranate rapidly loses its overall quality because of high water loss and microbial contamination. Nano-ZnO in combination with carboxymethyl cellulose (CMC) coating was used on pomegranate arils. Arils were dipped for 4min in distilled water (control), 0.1 or 0.2% (w/v) nano-ZnO suspension and then ZnO treated arils were coated with 0.5% (w/v) CMC and stored for 12days a...

Garlic storage is important to provide product for fresh market and fresh peeled processing. Garlic bulbs (cv. California Late) and unpeeled cloves were stored in several experiments in air and CA (0.1, 0.5, 1% O2 in combination with 0, 5, 10, 15 and 20% CO2) at 0-1°C for up to 6 months. Quality changes, especially sprout growth, decay and discoloration, were reduced by CO2-containing atmospher...
متن کاملEdible coatings for fresh-cut fruits.
The production of fresh-cut fruits is increasingly becoming an important task as consumers are more aware of the importance of healthy eating habits, and have less time for food preparation. A fresh-cut fruit is a fruit that has been physically altered from its original state (trimmed, peeled, washed and/or cut), but remains in a fresh state. Unfortunately since fruits have living tissue, they ...
